Orecchiette with broccoli and provolone del Monaco

Serves 4 • Vegetarian


350g orecchiette
600g broccoli
200g provolone del Monaco cheese
1 clove garlic
extra virgin olive oil


1Carefully wash and clean the broccoli, boil them in plenty of water and drain using a skimmer, you will have to keep the water in the pan.
2In a large saucepan, heat 5 tablespoons extra virgin olive oil with the crushed garlic clove, remove it and pour in the broccoli, letting them cook for few minutes.
3Meanwhile bring to a boil the water where you cooked broccoli, add salt and pour pasta; drain orecchiette when al dente and transfer them to the pan with the broccoli.
4Serve still hot pot with plenty of grated provolone del Monaco cheese.
